This is exciting!  I’ve been dying to share this salad dressing recipe with you because I made this one up all by myself!

I’m chalking this recipe up to big magic because it only took me only one attempt to create insanely flavorful, yummy goodness! 

And you are going to love it because it has only 8 ingredients that you may very likely have ready-to-go in your Eat to Live fridge and cabinets right now.

The key ingredient, that keeps you from having to add oil is tahini. 

But not all tahini is created equally.  Make sure you only buy tahini that has one listed ingredient: sesame seeds.  

I only use Once Again’s Organic Tahini (one-ingredient) :

Most other carrot ginger dressings use sesame oil to get that nutty rich flavor you crave. 

You are going to be so very pleasantly surprised by this recipe because you get all the tremendous flavor and richness, without any oil!

  • slightly spicy (from the ginger)

No-Oil Carrot Ginger Dressing
A bright, savory, fresh and slightly spicy carrot ginger dressing. Made healthier by no added oil and with a slightly sweet finish from orange juice. Vegan & Nutritarian

  1. 5 medium carrots, diced
  2. 1/2 cup orange juice
  3. 1/2 cup water
  4. 3 tbsp. fresh ginger, diced
  5. 3 tbsp. tahini (no oil added, only one ingredient: sesame seeds)
  6. 2 tbsp. liquid aminos
  7. 1 tbsp. white vinegar (or rice wine vinegar)
  8. 1 large clove garlic
  1. Add all ingredients into a high-powered blender or food processor. Process on high until smooth.
  1. I love this dressing over crunchier produce like iceberg or butter lettuce, fresh cabbage, cucumbers, carrots. etc...

    How long will this dressing keep in the fridge? I can’t wait to try it! I have been using a lot of your recipes and it makes this 6 week plan much easier!

      This dressing has lasted me a LONG time in the fridge! I use glass Mason jars for storage and it was still going strong at the 2 week mark!

    The flavor of this dressing is amazing!! I couldn’t get it totally smooth though (still had ginger and carrot chunks) any tips? I only have a food processor (which I did the dressing in) and a ninja blender.

      Hi Natasha!

      Yay!! I’m so glad you tried the recipe and love the flavor!

      You might want to run it through the Ninja blender–I used to have one and while it won’t get it completely smooth it should get rid of any chunks!

      Even using a Vitamix, there is fiberous texture to this dressing because of the ginger and carrot!
